Alright, I am not exactly a gin drinker. However, when some well-made gin cocktails are presented to me, I typically don’t shy away!
One of my all-time favorite gin cocktails is this beautiful classic, the Clover Club. It most certainly can be a top summer drink, in my opinion due to the raspberries!
HISTORY
This cocktail originates from the Clover Club mens group in Philadelphia, Pennsylvania. This club was from around the 1880s to 1920s.
It is very unclear in history as to how the drink was invented, but what we do know, is that it is the signature original drink of Philadelphia. The recipe has changed a bit in the past, and has been criticized as a drink in history as well – being called a “pansy” drink by Esquire.
However, it has made a serious comeback in the recent decade and has become a real crowd pleaser.
RECIPE
Here is the original recipe of the clover club:
2oz (60mL) London dry gin
0.75oz (22mL) lemon juice
0.5oz (15mL) raspberry syrup
1 egg white
Shake all ingredients in a shaker without ice first. Then shake again with ice. Fine strain into a chilled coupe glass and garnish with a few raspberries.
A note to make on this drinks that one of the older versions is made with a bit of dry vermouth.
If you take the clover club, swap the lemon for lime, and add 0.5oz applejack… you get a Pink Lady! We will cover that drink in another post.
This just goes to show the ingenuity of people when creating new drinks and being expressive with any spirit that is available!
